Answer:
Being a Pararescueman would be much more exciting than being a Helicopter pilot IMO. Pararescuemen get all the high speed schools in their initial training pipeline (Diver and MFF for example). Although understand that personnel recovery missions aren't necessarily the most exhilarating thing in the world, and any time a personnel recovery mission involves combat it's not going to be fun.
Neither career is going to be fun, they're both huge responsibilities and there's a lot to learn. The Pararescue pipeline is 2 years long and has a 90% attrition rate, you need to be in God shape and have the mentality of a badger to make it through. After that you'll be gone a lot doing training exercises, shooting packages, etc. Sure you might get the occasional HALO jump which is a lot of fun, but understand that in a real world operation if you're doing a HALO jump then it's because the area is too dangerous for anything else to work (aka it's not going to be fun).
I can't speak for being a pilot at all, I'm sure it has it's highs and lows like all jobs and it is an unconventional job, but after a while it's no different from driving a car except there's a lot more complex things to take into account.
a parachute, you can land anywhere at anytime and a safe landing.
